Farming is sustainability- and organics-oriented, with meticulous handwork and horse-drawn plowing that respects the land. Each parcel is treated as singular: across 12 plots, practices are tailored to vine growth and site conditions. Rigorous picking is followed by triple sorting (once in the vineyard, twice on sorting tables). Reds are 100% destemmed, macerated for an extended period and traditionally pressed; wines age ~18 months in barrel without racking, then are gravity-bottled under favorable lunar phases. Guilbert’s time with Domaine Gonon and Louis-Michel Liger-Belair informs a distinctive, original style.

Each of the 12 vineyard plots is treated individually, with micro-parcel management tailored to soil and vine conditions, resulting in wines of unique character and precision.

After harvest, grapes undergo triple sorting—once in the vineyard and twice on sorting tables at the winery—to ensure optimal fruit quality.

– The wine is aged in oak barrels for 18 months, with no racking, preserving natural development.
