With an oenology degree from the University of Dijon, Sylvie taught at an enology institute and worked as a consultant. Since taking over the family estate in 1990, she has practiced organics for over two decades, prioritizing handwork, minimal chemicals, biodiversity, and soil health. Vinification is tailored to cuvée and vintage: Clos Saint-Jacques typically includes ~70% whole bunch, while Bourgogne Rouge is ~90% destemmed. Her wines show deep color, vivid fruit and minerality, firm structure, and notable aging capacity; Clos Saint-Jacques is crafted to begin showing its best around ten years after bottling.

The proportion of new oak barrels is carefully adjusted based on the wine’s classification and character. For example, Clos Saint-Jacques is aged in 100% new oak to build structure and aging potential, while other cuvées are adapted accordingly. Wines typically age for about 18 months in French oak barrels, allowing flavors to harmonize and mature gracefully.
